IIN Mega Conference - Nesting Containers

I just spent the weekend at IINMega, a conference hosted by my alma mater, The Institute of Integrative Nutrition. It was truly amazing to be in a room with over 3,000 people dedicated to shifting our relationship with food. So much knowledge was shared that I didn't want to miss even a minute of it. The first day during lunch, I was eager to get back to my seat. So I opted to pick up something quick. I was disappointed in the healthy options available in Long Beach, not to mention, I wished I had at least brought my own containers to put my carry-out food in instead of the plastic that they gave me. I vowed I would bring my own food for the second day of the conference.

When I got home later that night, I quickly made some hemp milk and soaked 1/4 cup of chia seeds. I let it sit overnight. In the morning, I added stevia, maca powder, blueberries, and shredded coconut to it and put my chia pudding in a medium stainless steel container of the nested container set. In the small container, I added a handful of brazil nuts. In the large steel container, I added mix greens like romaine, spinach, and arugula, grabbed a lemon from my tree and squeezed it all over my salad greens with a pinch of Himalayan salt. I filled my glass tea tumbler with homemae cultured veggie juice mixed with 1 teaspoon of powdered greens. Packed it up in my IIN bag and was off!




All day Sunday, I felt healthy, nourished and inspired. I was able to enjoy the fruits of my labor. Zero waste, no plastic, BPA-free and healthy. 

Couldn't complain about the drive from San Diego to Long Beach either. It was a beautiful day that I decided to drive up Highway 101 instead of the 5. I had to take a picture. Nothing like getting some "primary food" to feed my soul too.
